Tropical menus tend to run in season and then stop, so buying the mango fill in bulk only makes sense when the volume justifies it which is exactly what the 2000g XL is for. Each cylinder holds 350-plus cartridge equivalents of food-grade nitrous oxide at a stated 99.95% purity. It suits mango espumas, coconut-and-mango plates and tall tropical drinks. Connect through a pressure regulator; the cylinder is disposable once the gas is spent.

How the 2000g fits between the 320g and 3000g Mango sizes

Mexican Mango is filled at 320g, 2000g and 3000g, and the 2000g XL sits in the middle: 350-plus cartridge equivalents, against around 45 in the 320g and 450-plus in the 3000g XXL. It is the size to move to once a mango special has proved itself past the trial stage but is not yet running at festival volume.

A pressure regulator is needed to connect it to a siphon; it is not a direct swap for an 8g charger.

At 2000g the mango note can carry a small tropical section on its own an espuma, a plated fruit dessert, a handful of drinks without needing a second tropical flavour to back it up. That is different from the 320g trial size, which is sized to sit alongside other flavours on a menu rather than carry a section by itself.
