Twelve stainless steel cylinders at 640 grams each, filled with refined E942 food-grade nitrous oxide and shipped with a free pressure release nozzle. Attached to a suitable cream dispenser through a pressure regulator, the cylinder lets you set the pressure for the job rather than accept whatever a cartridge gives you. Documentation: UN No. 1070, Class 2 / 5.1, ADR-RID 20. Each tank is fully disposable once the gas has been expelled and adheres to European regulations.

Storage and disposal

FastGas states a maximum temperature of 50°C for these cylinders, so they should be kept away from direct heat, ovens and hot equipment both in storage and in use. Once a cylinder is empty it is fully disposable, but check with your local waste management authority on the correct route for empty gas cylinders rather than putting them in general waste. Staff handling deliveries should also be briefed on the hazard classification printed on the case, even though the cylinders themselves need no special handling once safely in dry storage.

What the full case adds up to

At around 75.5 cream charger equivalents per cylinder, the full case of 12 gives a working stock in the region of 900 charges in total well beyond what a single smaller cylinder offers on its own, and the right choice once a kitchen is using gas every service rather than occasionally.

Handling a pressure-regulated cylinder

Because this size connects through a pressure regulator rather than a direct cartridge fitting, it is worth training staff to set the regulator correctly rather than assuming it works the same way as a small cartridge. Getting the pressure right is what keeps the whipped result consistent across the whole case.
